Milopita – Greek Apple Pie
This amazing dessert is the combination of an apple pie and a soft cake, with delicious apples and lots of cinnamon. Yum!

Serves 8
Ingredients
• 3-4 large apples - the hard red ones are the best
• 75 ml freshly squeezed lemon juice
• 200 grams soft butter
• 60 grams brown sugar
• 1 teaspoon ground cinnamon
• 250 grams caster sugar
• 2 teaspoons lemon zest
• 1 teaspoon vanilla extract
• 2 eggs
• 100 grams all-purpose flour
• ½ teaspoon baking powder
• 60 ml milk
• 2 teaspoons icing sugar
• 2 tablespoons butter (for the mold)
• 1 tablespoon flour (for the mold)
Instructions
1. Preheat the oven to 160 C.
2. Peel the apples, rinse them, and then thinly slice them.
3. Immediately drizzle lemon juice and mix to coat all the apple slices.
4. In a non-stick pan, 60 g of butter, brown sugar and cinnamon and heat over medium-low
heat to dissolve the sugar. Set aside.
5. Beat the egg whites until stiff.
6. In a bowl, mix the flour and baking powder.
7. In the bowl of the robot, beat 125 g of soft butter for 5 minutes with the sugar, lemon zest and vanilla until the mixture whitens.
8. Add the egg yolks one by one while continuing to beat at medium speed.
9. Add the mixture of flour and baking powder, then gradually add the milk.
10. Gently fold the whites, half of them at a time.
11. Butter and flour the 25 cm diameter round cake pan with a high edge. Pour in the prepared dough.
12. Drain the apples.
13. Arrange them in a circular pattern, covering the top of the dough. Press them in slightly.
14. Pour the rest of the melted butter over the apples.
15. Bake for 45 minutes.
16. Sprinkle icing sugar over the top.
17. Serve while still warm.
