Tzatziki

Tzatziki, a yogurt and cucumber appetizer, eaten with warm pita, is the best way to start any meal!

Preparation Time: 10 Minutes

Serves 4

Ingredients

  • 250 grams strained Greek goat

  • 1 large cucumber, peeled and seeded

  • 2 garlic cloves, minced

  • 2 tablespoons chopped dill

  • 3 tablespoons virgin olive oil

  • Salt

  • Pepper

Instructions

1. Grate the cucumber using the large side of the grater. Place it in a colander.

2. Sprinkle with salt, and allow to drain for 30 minutes.

3. After 30 minutes, pour the yogurt into a salad bowl.

4. Take paper towel, and use it to squeeze the excess water out of the cucumbers. Then add to the yogurt.

5. Add the chopped garlic and dill.

6. Mix well.

7. Add salt and pepper to taste.

8. Drizzle olive oil over the top, and mix well.

9. Refrigerate for 1 hour before serving with warm slices of bread or pita.
